Where do I begin and what's the difference between all these options?

Great question! The main difference is the flower on top. The basic single has a 7.5" flower, while the deluxe has a 9" flower. The double has TWO flowers, the triple has THREE, etc. If you want simple, classic and more traditional, I suggest you start with the basic single a build from there. If you are looking for a larger mum, start with the deluxe single or even the double.
